Summer months bring lots of get together with food and fun.  And what’s a good summer potluck without chocolate cake?  When I saw this recipe for Chocolate Mayonnaise Cake in Southern Living, my taste buds immediately went back to Church potlucks and a woman who always made this mayonnaise cake.  At the time I admit it sounded a little weird, but after one bite I was as believer!

Grilled Avocado with Mango-Pineapple Salsa

Memorial Day usually officially opens Grilling Season; however, the relentless rain we have been experiencing in Texas is putting a damper on our grilling season! When you have the chance, and your grill is hot, you must make these Grilled Avocados.  They are so simple, but they incredibly yummy and go with just about anything you’ve got on the grill.

All you need to do is season them with a little olive oil, lime juice, and salt and pepper.

Banana Crumb Cake

I tend to always go to my favorite banana recipe when I find those extra bananas turning dark – I’m sure you have your favorite too; however, if you want to bump things up a notch, this Banana Crumb cake adds an extra layer of crumb filling and topping plus a drizzle of frosting to make an incredible banana delight!

Crock Pot Balsamic Roast Beef

I watched this recipe make the rounds on the internet and just knew I needed to try it, and I am so glad I did!  This roast beef is the easiest thing you will ever make and it is so incredibly good- it’s a regular at our house now.

Just put your roast in the crock pot, stir together a few ingredients, pour it over the top, and let the crock work it’s magic.  The end result is moist and flavorful beef that you can’t resist.

Serve it with potatoes and your usual sides, or our favorite is to toast
