Crock Pot Mongolian Beef

January is crock pot season.  It’s a wonderful thing to come home to a hot and ready meal!  We love this Crock Pot Mongolian Beef.  It is easy, easy to make and the beef comes out so incredibly tender.  The sauce is loaded with flavor, but if you want to spice things up a little more, add more crushed red chili peppers and a little sriracha sauce. Serve it over steamed rice, and I highly recommend a side of roasted broccoli.

Pineapple Steak Stir-Fry

Pineapple Steak4663

My husband and I eat stir-fry a lot – with just the two of us, it’s easy and healthy, and we love it.  Sometimes chicken, sometimes, shrimp, sometimes steak.  We throw in whatever veggies are in the frig and dinner is ready in under 30 minutes.  One night I decided to add pineapple – this is now one of our favorite meals.  Start to finish in about 20 minutes – so easy and so good.

Crock Pot Balsamic Roast Beef

french dip 805

I watched this recipe make the rounds on the internet and just knew I needed to try it, and I am so glad I did!  This roast beef is the easiest thing you will ever make and it is so incredibly good- it’s a regular at our house now.

Just put your roast in the crock pot, stir together a few ingredients, pour it over the top, and let the crock work it’s magic.  The end result is moist and flavorful beef that you can’t resist.

Serve it with potatoes and your usual sides, or our favorite is to toast

Teriyaki Sweet Onion Sliders

Teriyaki Sweet Onion Sliders

It's almost Memorial Day Weekend-  you know what that means . . . Time to get Fired-Up about Firing-Up the Grill!

We tried out these Teriyaki Sweet Onion Sliders and they were a big hit -{so much so that I  didn't have a chance to click some good pictures before they were gone!}  Usually my family knows the routine and are pretty patient about waiting for me to take pictures before they eat . . .  not this day - these little gems disappeared in a flash.

Teriyaki Sweet Onion Sliders

We started things off by adding sweet onions and teriyaki to the burgers

Sloppy Tacos

If one of your goals this New Year  is to pull up to the dinner table more often than the drive through – have I got a great menu choice for you!  These sloppy tacos are the best of two worlds:  Tacos and Sloppy Joes.  Two great family favorites on their own, but combined they make for a family meal that will bring everyone home.

A few months ago this recipe from the Off-Site Kitchen in Dallas appeared in Bon Appetit.  My sister made the tacos and really liked them, and asked if I’d ever been there- I’d had never
