Chocolate Mayonnaise Cake
Summer months bring lots of get together with food and fun. And what’s a good summer potluck without chocolate cake? When I saw this recipe for Chocolate Mayonnaise Cake in Southern Living, my taste buds immediately went back to Church potlucks and a woman who always made this mayonnaise cake. At the time I admit it sounded a little weird, but after one bite I was as believer!
The mayo acts like sour cream to give this cake a rich and moist flavor. Top it off with cream cheese frosting and you’ll see how fast this cake disappears!

For the Cream Cheese Frosting
Directions
Preheat oven to 350°. Grease and flour a 9×13 inch pan or spray with a baking spray with flour.
Mix flour, cocoa, baking soda, salt, and baking powder together in a medium bowl. Set aside. Beat eggs, sugar, and vanilla at medium-high speed about 3 minutes or until mixture is light and fluffy. Add mayonnaise, and beat at low speed until combined. Add flour mixture to egg mixture alternately with hot water, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Pour batter into prepared pan.
Bake for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Cool completely on a wire rack (about 1 hour).
To prepare cream cheese frosting, beat first 3 ingredients at medium speed with an electric mixer until creamy. Whisk together powdered sugar and cocoa in a medium bowl; gradually add to butter mixture alternately with milk. Beat at low speed until blended after each addition. (If needed, add up to 1 Tbsp. milk, 1 tsp. at a time, to reach desired consistency.) Increase speed to medium, and beat 1 to 2 minutes or until light and fluffy. Spread on cake.

I have made lots of mayonnaise cakes from the same recipe but decided to try yours.
Cake was nice & thick but so dry and mayonnaise cakes are nice & moist!
