Blackberry Cobbler

There seems to be a lot of  different opinions on what is a “cobbler”.  Some toppings are like a pie crust, some like a biscuit, and others with a mix of oats and nuts like a crisp.  Even though they are all good, this is my personal favorite topping for cobbler.  A light and airy sweet  mix between a scone and a cake {okay, you know it has to be good when there is both heavy cream and buttermilk in the mix}.  Simple and easy, cobbler is always perfect for summer celebrations . . . and just right for enjoying

Easy Peach Cobbler

Cobblers rank high in the dessert category at our house – almost as good as pie, yet so much easier to make.  This peach cobbler is so good when it is warm out of the oven with a scoop of ice cream. To keep it super simple, use canned peaches plus a quick and easy light topping that only takes minutes to make.  You probably have everything to make this cobbler now – what are you waiting for?

If you are one that has a fear of making pie crust, these blackberry pie bars are your perfect solution.  I won’t say they taste just like a blackberry pie – it more like a crumble in a bar, but they certainly have that tantalizing taste of fresh blackberries,
