Skinny Jalapeño Dip with Grilled Summer Veggies
Just because we want to eat a little more healthy and make some good food choices doesn’t mean we have to give up fabulous food. This Skinny Jalapeño Dip is bursting with fresh jalapeño , cilantro, and garlic, but is made with Greek Yogurt so YES go ahead and dip in!
You can serve it with any crudités or chips, but I highly recommend some grilled summer veggies. I used yellow squash, zucchini, and some mini sweet peppers, but you could also grill some mushrooms, asparagus, or eggplant. Enjoy – there is no guilt here!
Skinny Jalapeno Dip
Ingredients
1 cup plain Greek Yogurt (I used no fat)
1 jalapeño pepper, finely chopped
2 tablespoons fresh cilantro
1 clove garlic, minced
1/2 teaspoon cumin
juice of 1 lime
salt and pepper to taste
Directions
Combine all ingredients. Best if made an hour or two ahead or overnight to let flavors combine.
Grilled Summer Veggies
Lightly brush veggies with olive oil. Season with salt and pepper. Heat grill to Medium High and grill just until charred, turning once. Most take just a couple of minutes on each side. You want them to still be crisp.
