Tortellini Skewers
Everybody loves appetizers. It’sjust fun to eat with your hands. Here’s a fabulous appetizer for your next party or get together {even those tailgate football parties – hubbies love these}. It’s tortellini salad on a stick, and it’s so simple to make. All you really have to do is soak the tortellini overnight in Italian Dressing. The pasta soaks up all that wonderful flavor and seasonings and tastes delicious. Don’t you love it when you can make something really great without a lot of fuss!
Now that you’ve got the basics, if you want to really make this an irresistible appetizer, I’ll let you in on our {secret ingredient} . . . it’s Olive Garden Salad Dressing. Use any Italian dressing and these skewers will be good, but if you take the time to pick up a bottle of that famous salad dressing at your local Olive Garden your tortellini will be packed with that one-of-a-kind Italian flavor that’s just irresistible! You can ask your server for a take- home bottle of dressing any time you are dining at Olive Garden, or you can just run in and pick up a bottle of dressing at the bar any time – yes, you can even use that take-out parking space right at the front! {Added Note: You can now get your Olive Garden dressing at Sams Club!}
Tortellini Skewers
Ingredients:
Frozen or Fresh Cheese Tortellini, prepared according to package directions
Italian Salad Dressing
Cherry Tomatoes
Olives
Cheese Cubes
Skewers (6″ is a good size)
That’s all you need. Prepare tortellini as directed, pour on salad dressing until it is generously coated and refrigerate overnight. You’ll need to add more dressing the next day because the pasta will soak it all up. Thread the tortellini on the skewers and mix in tomatoes, olives, or cheese cubes. You can use any type of olives or cheese that you like, but make plenty, they’ll go fast!
This is so pretty! And I bet yummy! Going to try this- I have a party coming up- how far in advance could I make it- does it store well? I want to make some to try this weekend 1st. Just wondering if I should make 1/2 recipe now and then make it again later this week- my party is Thurs. nite. Did you serve with crackers?

The tortellini will store several days (4-5) in the refigerator with the salad dressing on. You could make it up a few days in advance and just thread the on the skewers the day of the party. I usually just put it out with a few other appetizers! Good luck!
Yes, this is now going to be served at our New Year’s party too! I have a vegetarian family member and it can be a challenge to find something interesting to serve that she can eat and enjoy too. Thanks!
We hosted a party and a guest brought these. They had added green olives, pepperoni, and salami. I could see adding fresh crispy green and red peppers too, making several varieties of skewers. These were so delicious!
