Baked Ziti with Sausage and Peppers

This baked ziti is a go-to recipe for me. Need to feed a crowd- done. Need a great freezer meal- done. Craving comfort pasta – done. Love cheesy goodness- done. This recipe is loaded with sausage, peppers and three types of cheese so you know it’s going to be good! It makes a heaping 13×9 pan of baked pasta. I make the full recipe and then divide it into two (sometimes 3)  smaller pans to bake one and freeze one for later or to give away.  Add a salad and crusty bread and dinner is served.

Veggie Spaghetti

I don’t remember when it started, but somewhere in our family history I started to saute veggies to eat with our spaghetti.  Not just eat with our spaghetti, but to eat them on top of our spaghetti.  Once we started, we couldn’t stop, and now this is what spaghetti is at our house.  We love it, and without the veggies, it’s just plain boring.

It’s really quite simple.  Just begin with your favorite spaghetti with meat sauce- the magic happens with you add fresh veggies.

Nothing tastes as fresh and wonderful than summer salads.  This Farmer’s Market Chicken Pasta Salad has it all – it’s loaded with an abundance of fresh veggies and fruit (anything goes), along with rotisserie chicken and pasta tossed in a fresh Parmesan Vinaigrette.
