The past few weeks we’ve had an unusual amount of snow days here in Texas!  A perfect week to make a big batch of this Hamburger Soup.  I know Hamburger Soup may not seem like the most glamorous recipe, but believe me, it’s fast, it’s easy,  it’s healthy. and it’s so good – what more could you want?

We absolutely love salmon at our house and I love trying new and different ways to prepare it.  When I saw this Honey-Lime Glazed Salmon I was hooked immediately by the Browned Butter Lime sauce.  This salmon is easy and fast and incredibly delicious.  It’s on our must repeat list!

Honey-Lime Glazed Salmon

Ingredients

4 salmon filets
salt and freshly ground pepper, to taste
4 tablespoons flour
4 tablespoons honey
2 tablespoons olive oil
zest of 1 lime

For the Browned Butter Lime Sauce 6 tablespoons butter 2 cloves garlic, pressed 1 tablespoon honey Juice of 1 lime Kosher salt

Who says Crock Pots are just for hot and ready dinners?  I love knowing this Peanut Butter Cup Chocolate Pudding Cake is waiting for me!!

Serve it up with a scoop of ice cream and forget all about those winter blues.

Crock Pot Peanut Butter Cup Chocolate Pudding Cake

Ingredients

1 cup flour
1 1/4 cup sugar (divided use)
4 tablespoons unsweetened cocoa powder (divided use)
1 1/2 teaspoons baking powder
1/2 cup milk
2 tablespoons butter, melted
2 teaspoons vanilla
1/2 cup semisweet chocolate chips
6 Reeses Peanut Butter Cups (3 double packages) more for garnish if desired

Welcome February!  It’s that month we love and all things focus on those we love.
