Easy Strawberry Cake with Cream Cheese Frosting
Welcome February! It’s that month we love and all things focus on those we love. Certainly it’s a good time to celebrate with the fresh and Easy Strawberry Cake with Cream Cheese Frosting. This yummy cake would be perfect to make for your favorite valentine {hint, hint}. The secret to this moist and easy cake is it starts with a box mix; however, once you dress it up with a little sour cream to make it moist and some added strawberries for that fresh taste, you’ll never have to tell a soul about the box if you don’t want to! {wink}
Keep this recipe on hand for Valentines Day, but remember it all through the coming summer potluck season.
Easy Strawberry Cake with Cream Cheese Frosting
Ingredients
For the Strawberry Cake
1 box Strawberry Cake mix
1 cup water
1/3 cup oil
3 large eggs
1/3 cup sour cream
1 cup fresh, chopped strawberries
1 ( 8 ounce) package cream cheese, softened
1/3 cup butter, softened
3 1/2 cups powdered sugar
1 Tablespoon milk
1 teaspoon vanilla
Directions
Preheat oven to 350 degrees F. Spray a 9×13 baking dish with non-stick spray. Set aside.
In a mixer bowl, add the cake mix, water, oil, eggs and sour cream. Beat on low speed until combined, and then on medium speed for about 30 seconds. Add the cup of strawberries and mix by hand, until just combined.
Pour the batter into the prepared baking dish. Bake for 30-35 minutes, or until toothpick inserted in center comes out clean. Let cake cool completely before frosting.
For the frosting: In a large bowl, beat together the cream cheese and butter until combined and creamy. Slowly add in the powdered sugar, one cup at a time, until combined. Add the milk and vanilla. Beat on medium speed until frosting is smooth and free of any lumps. Frost the cake. Store leftovers in the refrigerator.

I make something similar using a cherry cake mix. I used to toss 1 c of chocolate chips in the batter, now I toss in 1 C of Dove chocolate covered cherries.
Your icing recipe though sounds way better than mine and so I’ll give it a go.
