Mini Fruit Pizzas {4th of July Style}
Not long ago Jocelyn shared these adorable Individual Fruit Pizzas she made for a baby shower; I got to thinking why not dress them up for the 4th of July? They are so easy to make but will add a big splash of star-spangled spirit to your celebration.
I used this recipe for Sugar Cookie Bars because it has become one of my favorites {easy to make and absolutely one of the best sugar cookies you can eat}. I just baked a sheet pan of cookie dough and then cut the shapes with a star cookie cutter. You can also buy the refrigerated sugar cookies to keep it even easier.
This would also be a fun activity for the kids – just slice up the strawberries and let them do the decorating!
Mini Fruit Pizzas {4th of July Style}
Ingredients
1 recipe of Sugar Cookie Bars baked as directed or Refrigerator Sugar Cookies
8 oz. cream cheese, softened
1/2 cup sugar
1 tsp. vanilla
Strawberries and Blueberries for Topping
Directions
Once your Sugar Cookie Bars are baked and cooled (make them up the day before), cut star shapes with cookie cutter. Cut strawberries into thin slices.
Beat together the cream cheese, sugar and vanilla until smooth. Spread on each cookie. Overlap strawberry slices to form stars; place a small dollop of the cream cheese frosting in the center and add blueberries. Now enjoy the party!
NOTES: I used a 3 1/4 inch star cutter. You can get approximately 18 stars out of a large sheet pan of the cookies. Look for smaller strawberries to slice.
