Smore’s Cookie Bars

We are planning to go camping this weekend, and the first thing that comes to mind is S’mores.  I have an addiction to S’mores. Yes, I spend hours in my kitchen baking up all kinds of sweet treats, but if you offer me a S’more, I will take it every time. It is not uncommon for me to eat two or three at a time. Cream Cheese Sheet Cake

The summers here in Colorado, are a funny thing. The weather changes quickly and drastically. We had a really warm day out at the park last week when out of no where it starts raining and drops 20 degrees. After running home and getting the kids settled with a movie, I walked by my front window to see one of the clearest rainbows I have ever seen, I think. The kids were thrilled. Quick Cilantro-Lime Shrimp



 
I hope you had a fabulous Memorial Day weekend.  Welcome Summer!   For us that means Simple Summer Suppers that are quick, easy, delicious, and don’t require turning on the oven to heat up the house.

To kick things off, here is a recipe for  Cilantro-Lime Shrimp we have recently come to enjoy – not only is fresh and flavorful,  it takes less than 30 minutes to throw together.   You can serve your shrimp with crusty bread or garlic bread to soak up all the delicious juice, or we like to serve it over rice.

Oatmeal Fudge Cookie Bars


Oatmeal cookies have always been a favorite around our house.  I love them with raisins, chocolate chips or with cranberries and lots of nuts.  This Oatmeal Fudge Cookie takes things one step further.  Not only do you get a that wonderful oatmeal cookie, but now you also add a layer of rich chocolate fudge.  The combination is just wonderful!   This recipe a 13×9 pan so there is plenty for parties and friends if you decide to share!
