Smore’s Cookie Bars
We are planning to go camping this weekend, and the first thing that comes to mind is S’mores. I have an addiction to S’mores. Yes, I spend hours in my kitchen baking up all kinds of sweet treats, but if you offer me a S’more, I will take it every time. It is not uncommon for me to eat two or three at a time. I have even gone as far as making them in my microwave, when it was my only option. There is just something about that warm gooey marshmallow with melted chocolate all held together by graham crackers. Mmmm…
Well, here is an indoor version of the outdoor classic. The cookie crust that is on the bottom and the top is a cookie base, but don’t worry there are graham crackers mixed in to give it that graham cracker flavor. We used good old-fashioned Hershey Chocolate Bars and marshmallow fluff. But don’t let this indoor version fool you, it is still a sticky, gooey mess to love.
Here we go, we start with a layer of our graham cracker cookie crust and place a couple of king sized Hershey bars on top of that.
Of course, marshmallows are pretty critical in a S’more. So spread a jar of marshmallow fluff all over the top of the chocolate bars.
Lastly, top it off with another layer of our cookie crust and bake. Be sure to have a fork close by. 😉
S’mores Cookie Bars
Ingredients:
1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
2 king-sized milk chocolate bars (e.g. Hershey’s)
7 oz jar marshmallow fluff (not melted marshmallows)
Directions:
Preheat oven to 350°F. Line an 8-inch square baking pan with aluminum foil (leave some over hang on the ends) and lightly spray with cooking spray.
In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow fluff. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together).
Bake for 30 to 35 minutes, until lightly browned. Cool completely, if you can. When ready to serve, simply lift the bars out of the pan with the foil and cut into squares.
