Squash Bake


This is that time of year I wish I had a backyard full of squash and zucchini {Big Sigh), but since I don’t I’m grateful for Kroger who has plenty and I envy you who have so much you don’t know what to do with it!  I love squash and zucchini and I love to cook it all different ways (such as oven fried).   Here’s a favorite for yellow squash.

Squash Bake

Ingredients:

4 cups yellow squash, cleaned, boiled, and smashed

1/4 cup onion, finely chopped

1 egg, beaten

1 teaspoon sugar

1/2 cup Ritz cracker crumbs

Classic Cornbread

Fall brings changes in the weather, school, sweaters and jackets, but it also brings amazing food.  I love soups, stews and chilis on those cool fall nights.  And what could go better with all the heart warming comfort food than cornbread.  Corn bread is such an easy addition to your fall dinners.  This is a simple and delicious recipe that I know you will love just as my family does.

Classic Cornbread

Ingredients:

1/2 cup butter, melted

1 1/2 cups yellow cornmeal

1 cup all-purpose flour

1/2 cup sugar

1 1/2 tsp. baking powder

Owl Cupcakes

So, I have been having some (alot) of trouble accepting that is actually fall and winter will be here way too soon.  I was gone for three weeks and when we came home to Colorado fall was here full force.  The leaves on the trees are full of colors, the mornings are getting nippy, and my first grader has fall break.  I know that fall had to come and there was nothing I could do about it, but I really am more of a summer girl.

Chicken Spaghetti


Here’s a great update on an old favorite.  Spaghetti is always a fast and easy dinner option.  But here’s a twist on this classic dinner that’s just as simple to make,  yet  tastes anything but ordinary.   The secret is in cooking the chicken in a store-bought spaghetti sauce.   When you add in  all the flavor of the chicken broth and juices along with a little apple juice and a few extra spices – no one will ever suspect you started with a store-bought sauce!  Simply Delicious.

Cook Once Eat Twice:   This sauce freezes well.  We seldom make a single batch.
