Praline Pecan Sweet Potato Casserole

The big feast is only two weeks away!  One of my favorites at Thanksgiving has to be this Praline Pecan Sweet Potato Casserole.  I feel it’s a  little like cheating and eating dessert first  because these sweet potatoes are as good as pie once you add the brown sugar and pecan praline topping.

Brown Sugar and Bacon Green Beans

In a flash Halloween is over and Thanksgiving is right around the corner.  In preparation for the big feast, these green beans are an easy and incredibly good side dish.  Do you see all that bacon?  Add butter, brown sugar and seasoning and of course they are good!  I have to admit when I first tried these beans I was a little skeptical about the addition of soy sauce, but it works perfect and these beans are fabulous.  Have you made your Thanksgiving menu yet?

Veggie Spaghetti

Veggie Spaghetti

I don’t remember when it started, but somewhere in our family history I started to saute veggies to eat with our spaghetti.  Not just eat with our spaghetti, but to eat them on top of our spaghetti.  Once we started, we couldn’t stop, and now this is what spaghetti is at our house.  We love it, and without the veggies, it’s just plain boring.

It’s really quite simple.  Just begin with your favorite spaghetti with meat sauce- the magic happens with you add fresh veggies.

Veggie Pizza Appetizer

This Veggie Pizza Appetizer is another oldie that I just love to find on a party spread.  It’s easy to make with refrigerated crescent dough topped with seasoned cream cheese and fresh veggies.  The fun part is you can customize this to your own individual taste.  I used broccoli, cucumbers, peppers, and carrots, but there is no limit to the crunchy combinations you can make.  I’ve seen tomatoes, onions, olives, and even cheese added to the mix.

Sweet Fire Sweet Potatoes

I love the flavors of fall, but sometimes it’s fun to spice things up a little!  These Sweet Fire Sweet Potatoes will liven up any meal.    A touch of jalapeno jelly adds just enough sweet mixed with a little heat to  add another layer of flavor to your usual sweet potato dish.

Sweet Fire Sweet Potatoes

Ingredients

2 pounds sweet potatoes, peeled and cubed (about 4- 4 1/2 cups)
1/3 cup jalapeno jelly
2 tablespoons red wine vinegar
2 tablespoons fresh lime juice
sea salt to taste
2 tablespoons fresh cilantro, chopped

Directions

Preheat oven to 450 F.
