Hawaiian Fried Rice

Coconut Cilantro Rice

Nothing like a good early morning run to get the day started. I am posting so much earlier than normal. Now that is light early in the morning I can get my runs in and start my day.

Well, as promised here is a delicious tropical side dish that will make you feel like you are on a tropical island somewhere. Wouldn’t that be nice? It does pair perfectly with the Grilled Hawaiian Chicken.  So take your taste buds on a vacation, it’s better than nothing, right?  I will take what I can get.

Wild Rice Stuffing

 

I had the opportunity to live in the gorgeous Minnesota/Wisconsin area for a short time- during which I was first exposed to, and came  to develop a love for wild rice.  The crunchy-nutty flavor of wild rice is absoletly fabulous and this wild rice stuffing is a delicious way to serve it.

30 Minute Red Beans and Rice

Let me just begin with an apology to all of you in Louisiana who are probably shaking your heads at the idea of Red Beans and Rice in 30 minutes.  I love really good beans and rice too, but sometimes we just don’t have all day for the beans to cook.  Whether it’s a long day at work, soccer, band, dance, piano . . . or maybe even all of the above {yikes} – sometimes we just need to feed the family fast without a lot of fuss!

Rice Pilaf



This rice is a staple in our house. We eat it so often and it wasn’t until the other day that I realized it needed to be shared. It is simple yet full of flavor. I always keep these ingredients on hand to easily add Rice Pilaf to any dinner.  Don’t forget the lemon juice.  It really brighten ups the rice.  It can easily be double if needed.

Rice Pilaf pairs well with:

Grilled Chicken
Chicken Cordon Bleu
Chicken Bundles

2 tbsp. butter
2 Tbls onion, minced
3 cloves garlic, minced
