Peanut Butter Rice Krispie Bars

Happy May Day!!  Today we have flowers and a treat for you! {Okay, a picture of the flowers and a recipe for the treats.}  Do you have plans to drop off flowers?  Don’t forget the May Day gift tag we made for you . . .

Do you think when Kellogg’s first made Rice Krispies they had any idea how popular they would become?  Who doesn’t like Rice Krispie treats?  And the fact that they are so easy to make makes them double the fun.

Here’s a version that’s been around a long time, but so worth having in your recipe collection.   We love the peanut butter/chocolate combination in just about any form!

Peanut Butter Rice Krispie Bars

Ingredients:

1 cup sugar
1 cup karo syrup
1 cup peanut butter
6 cups rice krispies
2 cups chocolate chips

Instructions:

Measure Rice Krispies into large mixing bow.  Set aside.   Spray a 13 x 9 pan with cooking spray and set aside.

Heat sugar and karo syrup over medium heat until it boils.  Remove from heat and stir in peanut butter until well blended.  Pour over rice krispies and stir until completely mixed.   Press mixture into prepared 13 x 9 pan.

Melt chocolate chips in a microwave safe bowl.  Start with one minute and stir.  Add 30 seconds and stir until smooth.  Spread over peanut butter rice krispies.  Allow to cool until chocolate is set.

  1. Why have I never had peanut butter rice krispies? Thanks for enlightening me. I will be making these soon.

  2. I’ve been making these for years but I use 1 cup of butterscotch chips and 1 cup of semi-sweet chocolate chips for the topping. They are very addictive!!

  3. I just found this recipe through Pinterest. I have a great-grandson I babysit a lot. He’s four and in Pre-K. I’m trying to find healthful things I can give him after school. However, if he get too much sugar, he goes crazy and is hard to keep under control. Has anyone tried to make these without all the sugar/corn syrup and maybe with more peanut butter?

  4. I want mine to be very chewy/tender, how can I make that happen? Can I add more PB to get what I’m wanting?

  5. April – Try just decreasing the amount of rice krispies a little so you have more of the peanut butter sauce. Hope that helps – let me know!

  6. How long can these be stored?

  7. Mary – the never last long at my house, but they should keep about a week at room temperature.

  8. I have made these Rice Krispies several times now and have found that the chocolate makes it a bit too rich for my liking so I leave that off and I can tell you that they disappear within a day or two
