Rocky Road Cheesecake- No Bake



If you are a fan of rocky road ice cream then have I got a dessert for you!  Who said dessert had to be complicated?   Sometimes you need something sweet – a little something to finish off dinner without a lot of fuss.  Here you go, chocolate, marshmallow, peanuts in an oreo crust.  Best of all you don’t even have to turn your oven on- perfect for hot summer days when you want something cool and delicious!

Rocky Road Cheesecake

Ingredients

3 squares semi-sweet baking chocolate (1 oz each), divided
2 packages (8 oz) cream cheese, softened
1/3 cup sugar
1/4 cup milk
2 cups cool whip, thawed
3/4 cup miniture marshmallows
1/2 cup cocktail peanuts, chopped

1 Oreo pie crust

Chocolate shavings for garnish, optional

Directions

Microwave 1 of the chocolate squares in a small bowl on high for one minute.  Stir until chocolate is completely melted.  Set aside.

Beat cream cheese, sugar and milk in large bowl with electric mixer on medium speed until well blended.  Add melted chocolate; mix well.  Gently stir in whipped topping, marshmallows and peanuts.  Coarsely chop remaining 2 chocolate squares, stir into cream cheese mixture.  Spoon into crust.

Refrigerate 4 hours or until set.  Store leftover pie in refigerator.
