Chocolate Ice Cream

Chocolate Ice Cream isn’t just for kids anymore. This recipe results in a very rich and creamy deep chocolate ice cream. Whether you enjoy it in a bowl or an ice cream cone {I like it in a cone, myself}, I hope it brings a little sweetness to your day.

Chocolate Ice Cream

Ingredients:

2 cups heavy cream
3 Tbls. unsweetened cocoa powder
5 oz. bittersweet or semisweet chocolate, chopped
1 cup whole milk
3/4 cup sugar
pinch of salt
5 large egg yolks

Shrimp Pasta Salad

If I had to choose one word to describe this salad it would be so simple – “Fresh” says it all.   Shrimp, pasta, fresh asparagus, fresh tomatoes and parmesan tossed with Italian dressing, lemon zest and fresh basil . . . Add it all together and you have one very fresh and delicious salad.

This pasta salad is perfect as a side dish, especially with grilled favorites, or just add a baguette to serve as a light summer supper.

Dark Chocolate Brownies

First, let me say thank you for all of the birthday wishes. It was also Easter, so we had a big Easter dinner at my house with nearby family. It was a great way to spend the day. I hope everyone had a Happy Easter and a fun-filled April Fool’s Day.

Now to get down to business. These brownies are dark and rich, chewy and fudgy. There isn’t much to these brownies. Only one bowl, and simply mixing ingredients together. No more difficult than opening a box mix.

Blackberry Fool

Happy April Fools Day!  No, this isn’t a goofy gag or a silly prank!  This pretty little treat is actually called a fool.  A fool  is an British dessert generally made by mixing pureed fruit, whipped cream and sugar.

Originally the most common fruit ingredient in fools was gooseberries, but I opted for blackberries.  To make this easy {yet very pretty} dessert you simply puree your  fruit and swirl it through the whipped cream.
