Pesto Chicken Sandwich

Yesterday I shared with you how to make fresh basil pesto- you really need to take a few minutes to make it.  It is so good in so many things, but I'm most excited to use it for this pesto chicken sandwich.  I think this is one of my new favorites- it is so amazingly fresh tasting and so fast to put together.  All you need is a little rotisserie chicken, Greek yogurt and pesto-  totally fresh and healthy -  perfect to pack for lunch or even for a light summer supper.

Basil Pesto

Lately we've been trying to focus on fresh flavors for spring.  This homemade basil pesto says fresh and flavorful in every bite. I know it is so easy to buy pesto at the market - but when you have the time, and especially when you have fresh basil in your garden, this pesto only takes minutes to make the flavor will amaze you!  We love it for sandwiches such as this easy stuffed bread, or most any Panini.  It's also great in pastas and salads.  Of course, we'll be bringing you a few new recipes to try it

What's more fun than a golden delicious cupcake?  How about a cookie and a cupcake combined!  These Golden Oreo Cupcakes have both are dedicated to our adorable nephew/cousin.  You see, Gold is the color of Childhood Cancer Awareness.

Homemade Flour Tortillas

YUM! Tortillas are easier to make than you might think. In fact, my third grader did a lot of this particular batch. And you know these are going to taste so much better than those bagged tortillas we buy at the grocery store.  These tortillas pair perfectly with our delicious Tortilla Soup or any other mexican food.

For years this Mandarin Salad was my favorite- I took it everywhere with me.  Then I met a yummy Spinach Salad and soon forgot all about my mandarin friend.   In fact, after a time, I completely forgot all about it. Recently I came across the recipe- it was like meeting an old friend.  We quickly became reacquainted and now I remember  how fresh and good it is.  I especially love the sugar-coated almonds.
