Pesto Chicken Sandwich
Yesterday I shared with you how to make fresh basil pesto. I hope you take a few minutes to make it. It is so good in so many things, but I’m most excited to use it for this pesto chicken sandwich. I think this is one of my new favorites- it is so amazingly fresh tasting and so fast to put together. All you need is a little rotisserie chicken, Greek yogurt and pesto- totally fresh and healthy – perfect to pack for lunch or even for a light summer supper.

Pesto Chicken Sandwich
Ingredients
2 cups cooked chicken, chopped (Rotisserie work really well)
1/4 cup plain Greek yogurt
1/2 cup pesto (recipe here) or use store bought
salt and fresh ground black pepper to taste
For Serving:
1 baguette cut into 3-4 pieces, toasted
Roma tomatoes, sliced
mozzarella, sliced
lettuce or spring mix
Directions
In a large bowl, combine chicken, yogurt and pasta with salt and pepper to taste.
Serve on baguette with lettuce, tomatoes, mozzarella and chicken mixture.

I absolutely love pesto but I’ve never made my own. I guess it’s time to give it a try haha. I can’t wait to make this sandwich. I pack my lunch every day and this sounds so good. I like that it had Greek yogurt rather than mayo. Thanks!
