Pesto Chicken Sandwich

Pesto Chicken Sandwich

Yesterday I shared with you how to make fresh basil pesto.  I hope you take a few minutes to make it.  It is so good in so many things, but I’m most excited to use it for this pesto chicken sandwich.  I think this is one of my new favorites- it is so amazingly fresh tasting and so fast to put together.  All you need is a little rotisserie chicken, Greek yogurt and pesto-  totally fresh and healthy –  perfect to pack for lunch or even for a light summer supper.

  1. I absolutely love pesto but I’ve never made my own. I guess it’s time to give it a try haha. I can’t wait to make this sandwich. I pack my lunch every day and this sounds so good. I like that it had Greek yogurt rather than mayo. Thanks!
