Summer is officially here this weekend - long, hot summer days makes me want to spend more time having fun and less time in a hot kitchen.  I love using my crock pot in the summer- it's fast and easy, plus no heating up the kitchen by turning on the oven!This Crock Pot Hawaiian BBQ Chicken is so yummy, and so easy!

It is as simple as layering chicken, onion, bbq sauce and pineapple in your crock pot.

Let that mix cook while you are out doing something fun.  When you return home- just shred that tender chicken and let

Last summer I was with my sisters at a restaurant on the Seattle water front  that served the most amazing Crab Louie- wow, how beautiful! I hadn’t seen or had that salad in so long. The Crab Louie is a west-coast favorite made with fresh Dungeness Crab. I grew up in Washington State, but  I’ve lived in Texas so long I forgot all about this amazing dish.  What a shame because this is one beautiful and one delicious salad.  I decided I needed to make them this year for fresh and cool summer suppers.

I had my first S'more of the summer this past weekend, enjoying it with friends around a fire on a cool Colorado summer night.

I love S'mores.

I crave them.

I eat way too many of them.

I can't help myself.

So it is no wonder that S'mores Popcorn would be at the top of my summer snack list. It is easy and requires no fire. Although, I have been known to satisfy a S'mores craving by using the microwave; not as good, but it will do.
