S’mores Popcorn
I had my first S’more of the summer this past weekend, enjoying it with friends around a fire on a cool Colorado summer night.
I love S’mores.
I crave them.
I eat way too many of them.
I can’t help myself.
So it is no wonder that S’mores Popcorn would be at the top of my summer snack list. It is easy and requires no fire. Although, I have been known to satisfy a S’mores craving by using the microwave; not as good, but it will do.

S’mores Popcorn
Ingredients:
2/3 cup popcorn kernels
1/2 cup sugar
1/4 cup brown sugar
1 cup light corn syrup
1/2 cup butter
1 teaspoon vanilla
3 cups Golden Graham cereal
3 cups mini marshmallows, divided
1 cup milk chocolate chips
Directions:
Pop popcorn kernels according to your poppers instructions. In a very large bowl add the Golden Graham Cereal and 2 cups of the marshmallows to the popped popcorn.
Heat the sugar, brown sugar, corn syrup and butter over high heat until boiling. Remove from heat and stir in the vanilla. Pour syrup mixture over the popcorn mixture and stir to evenly coat. Spread onto wax paper, adding any more marshmallows if desired.
Melt chocolate chips in the microwave, stirring every 20 seconds, until smooth. Drizzle over the popcorn mixture. Allow chocolate to set before serving.
Sounds perfect for summertime outdoor movie night! Or for the fireworks show on the 4th. Maybe I’ll add some red wafer “chocolate” melt drizzle and make blue marshmallows.
