Asian Chop Salad

After all the holiday treats, I was really in need of something with a lot of nutritional value.  This salad was just what I needed.   It is so colorful and full of flavor.  You know when your food is this colorful {and it didn’t come out of a box} it has got to be good for you.  The great thing about this salad is that you can make it to your likings or what you may have on hand.  Add more or less of the salad ingredients to your personal or family preferences.  It makes a lot, but that is okay with me because I can eat it all week long for lunch.
