Turkey, Bacon, Apple and Brie Panini

One more idea for that leftover Thanksgiving turkey, and then I’m headed to Denver to spend Thanksgiving with my grandkids!  We love paninis at our house because they make leftovers hot and delicious.  For a fast and easy post-turkey-day treat {maybe after a long day of black Friday shopping} just layer turkey,  brie, bacon, a thin slice of apple, and spinach between two slices of artisan bread and toast – dinner is done and you can put your feet up!

Another tasty combination is  this Turkey Panini with Pesto Mayo.  The great thing about paninis is you can use whatever you have – turkey with a little stuffing and cranberry sauce maybe?   The possibilities are endless, but the best thing is dinner is simple and quick so you have more time to spend with family!  Enjoy the holiday-
