Sweet and Spicy Citrus Tilapia
It’s a good thing we no longer have to fish for our dinner or there would be a lot of hungry people at my house. You really can’t classify us as fishermen around here; however, we did give our kids some experience . . . that is if you count those days they fill the city pool with hungry trout and all you have to do is stick a line in to get a bite! 😉 Thank goodness for my local grocer where I can bring home tilapia and fix this sweet and spicy citrus fish in about 5 minutes- stick it under the broiler for 15 minutes and I’ve got a fast and easy, delicious dinner. {P.S. For those of you who do catch your dinner you have my utmost admiration!}
Sweet and Spicy Citrus Tilapia
Ingredients:
4 (6-ounce) tilapia fillets
cooking spray
1/2 cup fresh orange juice (about 1 orange)
3 tablespoons fresh lime juice (about 1 lime)
1 tablespoon brown sugar
1 tablespoon extra-virgin olive oil
2 teaspoons lower-sodium soy sauce
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1/4 teaspoon ground red pepper
2 garlic cloves, crushed
1/2 teaspoon paprika
Directions:
Arrange fish in a single layer in a shallow roasting pan (13×9 or similar) coated with cooking spray. Combine orange juice and next 9 ingredients (through garlic); pour over fish. Let stand 15 minutes.
Preheat broiler (I use low setting)
Sprinkle fish with paprika; broil 15 minutes or until desired degree of doneness. Drizzle sauce over fish when serving.
