Scallion Sweet Potatoes {On The Grill}

These sweet potatoes are a great addition to any grilled dinner.  They come together quickly and then they can be placed on the grill along side whatever else is on there.    And seeing that it is still hot outside, it sure beats turning on that darn oven!!

Scallion Sweet Potatoes {On The Grill}


2 large sweet potatoes, peeled and chopped
1/2 bunch scallions, cut into 2 inch pieces
6 garlic cloves, crushed or minced
1 Tbls. fresh Thyme
1/4 cup olive oil
salt and pepper


Combine sweet potatoes, scallions, garlic and thyme in a bowl.  Drizzle with olive oil and season with salt and pepper; toss to coat.  Place sweet potatoes on a large sheet of foil and fold up around, sealing any edges.  Grill over low heat until the potatoes are tender, 25-35 minutes.  {I would check these every so often since cooking times can vary depending on the temperature of your grill.}
