Marinated Steak with Caramelized Onions
If you’re like me; summer means cooking on the grill. Not only does it not heat up the house; but everything just tastes fresher, maybe even healthier on the grill. This marinated steak makes a simple summer meal. My family loves it; but then I have a couple here that think Beef is a food group of its own. The marinade has a sweet, but hearty flavor with just a touch of A-1 sauce. Goes great with mashed potatoes {oven roasted potatoes are good too, but then you have to heat up the kitchen . . . } Best of all are the caramelized onions- don’t even think about skipping them!
Marinated Steak with Caramelized Onions
Ingredients:
1-2 pounds sirloin steak or flank steak
1/4 cup balsamic vinegar
2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
2 tablespoons brown sugar, packed
2 tablespoons olive oil (divided use)
2 cloves garlic, minced
2 tablespoons A.1. steak sauce (or your favorite)
1 large onion, sliced into thick rings (I always do two because we love the onions)
Directions:
Mix balsamic vinegar, lemon juice, Dijon mustard, brown sugar, 1 tablespoon of the olive oil, garlic and 1 tablespoon of the steak sauce until well blended. Pour over steak in a shallow dish; turn steak to cover both sides. refrigerate at least 1-2 hours.
Heat 1 tablespoon of olive oil in a large nonstick skillet on medium-high heat. Add onions and cook for about 5 minutes stirring frequently. Reduce heat to medium-low and continue to cook until onions are translucent – about 15-20 minutes, so put the steak on now.
Grill the steak how you like it {at my house there are always two: one is still mooing and another stays on somewhat longer}. Let rest 5 minutes before cutting. Slice across the grain into thin slices.
Stir remaining 1 tablespoon of steak sauce into onions and serve with sliced meat.
