Classic Pumpkin Pie from Libby’s
Buried deep in the recipe archives of Caramel Potatoes is one of my all-time favorite recipes: Mexican Rice with Cotija Cheese. I love, love, love this rice. I especially love with Honey Lime Enchiladas or with Grilled Fajitas! This one definitely needed a new pictures and to be shared again.
I know rice is a simple side, but for me it makes all the difference. The secret to the wonderful flavor in this rice is Tomato Bouillon which you can find in the Mexican Food section of your local grocery store.

These Butterscotch Pears are a perfect balance of sweet and fresh. They are so simple to make and then just put them in the crock pot to cook while you serve dinner. You get the most delicious ending to any meal! Or try them as an addition to your breakfast buffet or brunch for the holidays – they’ll steal the show no matter when you serve them!
This yummy treat is fabulous as is, but you may want to add a little scoop of ice cream . . .

Oh do I have a peachy treat for you today! I’ve always been a fan of pineapple upside down cake – so to take that classic cake and add my love of peaches just makes total sense. The result is this yummy Peach Upside Down Cake which has become my new favorite!
Here in Colorado it’s Palisade Peach season and I can’t get enough! This cakes starts, upside-down of course, with a layer of butter, brown sugar, and beautiful peaches.
There’s nothing better than a fresh, crisp and crunchy apple! I so look forward to the new crop of apples to come in each year. I absolutely love the Honey Crisp and also the tart and crunchy Braeburns! What are your favorites?
