Delish: Another Lunch

Crispy Smashed Potatoes

 

Here is a really fun and different way to serve potatoes.  These smashed potatoes are so good because you get a soft creamy center like mashed potatoes, but a crunchy crisp outside like roasted potatoes – delicious!  We love serving food in different ways {and of course we love potatoes}  this is a yummy change from baked or mashed potatoes – it’s one of our favorites!

The smashed potatoes are so simple, but they do take about 1 1/2 hours (mostly cooking time) – so plan accordingly.  We like to make them with Crockpot Barbecue Ribs – since

Kitchen Talk: Best Ever Baking Spray (and Giveaway)

Crockpot Barbecue Ribs

 

I’m not really sure it’s legal to cook ribs in a crockpot in Texas {Wink} . . . so we may have to keep this recipe on the hush~

But since I don’t have a smoker and the weather outside is turning wet and cold, here is a great way to enjoy great Texas barbecue flavor all fall and winter without stepping a foot outside!

We don’t eat ribs that often, but every now and again my boys love these ribs- they literally fall off the bone and are melt-in-your mouth tender!

Caramel Apple Nachos

There is a chocolate store not too far from me that has the most amazing caramel apples.  These apples are dipped in caramel and then covered with so many other delicious toppings such as chocolate, marshmallows, nuts, candies, and so much more.  They are amazing!  I have to restrain myself almost daily from purchasing and then devouring one of these myself while my kids are at school.  These were the inspiration for these simple (and much cheaper) homemade version.
