No-Bake Blackberry Lemonade Pie
Labor Day weekend is here. This No-Bake Blackberry Lemonade Pie is a refreshing way to celebrate our last hurrah of summer before we totally start craving everything pumpkin! (Yes, I admit, I can’t wait) But for now this refreshing taste of lemon and sweet blackberries is perfect for a warm summer day with friends. It all begins with a Lemon Cream Oreo Crust, followed by a lemon-cream cheese filling, and finally topped off with a fresh swirl of fresh blackberry sauce which all adds up to YUM. Did I mention it’s no bake? Summer is still looking delicious!

No-Bake Blackberry Lemonade Pie
Ingredients
6 ounce package fresh blackberries
3 tablespoons sugar
2 teaspoons water
24 Lemon Cream Oreos
1/4 cup melted butter
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup fresh lemon juice
2 teaspoons lemon zest
Directions
Combine the blackberries, sugar, and water in a small saucepan. Cook over medium-high heat, stirring occasionally, until the berries are soft and juicy, about 4-5 minutes. Smash the berries slightly with a spoon and allow to cool.
Crush the Lemon Oreos in a Ziploc bag until finely crushed. Combine the crumbs with the melted butter and press into the bottom and sides of a 9-inch pie plate. Freeze while you make the filling.
In a large bowl, beat the cream cheese with a mixer at high speed until smooth. Add the condensed milk and beat until combined. Add the lemon juice and zest and beat again until completely combined and smooth. Pour into the prepared crust. Spoon the blackberries over the filling and swirl gently with a knife. Refrigerate overnight.
