Carrot Lemonade
Carrot Lemonade?? I know, it took me by surprise too. I first spied this Carrot Lemonade a couple years back in BHG. I was so intrigued by the mix of flavors, I bookmarked it and pulled out this week.
Lemonade is a must for summer and this Carrot version adds a whole new twist. It’s so pretty and packed with Vitamins A and C, plus the carrots help sweeten the mix with no added sugar!
You don’t need to love carrots to love this drink – the pineapple and lemon take center stage – your kids don’t even need to know there are veggies involved {wink}. Make it up and keep it on hand for breakfast or to sip by the pool on a hot afternoon.
Carrot Lemonade
Ingredients
1 pound carrots, peeled and cut into one inch chunks
2 cups water
3 cups pineapple juice
3/4 cup fresh lemon juice
cold water
ice
lemons wedges
Directions
In a medium saucepan combine carrots and water. Bring to boiling; reduce heat and cover. Simmer for 30 minutes or until very tender. Cool slightly; transfer mixture to a blender. Add 1 cup of the pineapple juice. Cover and blend until smooth.
Transfer to a pitcher or plastic beverage container. Stir in remaining pineapple juice and lemon juice. Cover and chill 2 to 24 hours. (Mixture may thicken upon standing; stir in 1 to 2 cups water to desired consistency.)
Serve over ice with lemon wedges.
Store in the refrigerator up to one week.
