Strawberry Cream Cheese Bread
I love the fresh taste of summer berries. The abundance of sweet strawberries is a perfect excuse to make a loaf of this fresh Strawberry Cream Cheese Bread.
I’m not really sure if you should count this Strawberry Cream Cheese Bread as breakfast or dessert – either way, this sweet bread is made with cream cheese to stay moist and tender, plus it’s filled with fresh berries bursting with flavor! I think it might just be time for me to make another loaf!
Strawberry Cream Cheese Bread
Ingredients
1/2 cup butter, softened
1 cup sugar
4 ounces cream cheese, softened
2 eggs
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon Kosher salt
1/2 cup buttermilk
1 1/2 cups strawberries, rinse, dried and chopped
Directions
Preheat oven to 350° F. Grease and flour a 9×5 inch loaf pan (or use a baking spray with flour).
Cream butter, sugar and cream cheese until fluffy. Add eggs one at a time. Mix in vanilla.
In separate bowl, mix flour, baking powder, baking soda and salt. Blend flour mixture with butter mixture just until blended. Add buttermilk and only stir until just combined; do not over mix.
Carefully fold in strawberries. {I like to reserve just a few berries to sprinkle over the top of the dough). Note, dough mixture will be thick.
Bake for 60- 75 minutes or until tester comes clean in center of bread.
