Ever since my kids were little we have counted the number of sleeps until an event or particular day.  As my kids get older it still seems to stick around.  Every morning the new count is announced by someone and then often repeated throughout the day.  We are currently four sleeps away from our neighborhood pool opening.  We are pretty excited at our house; it is like a major holiday for us.  The pool is where you will find my kids and I on just about any day during the summer.  And what better poolside treat than a SCOTCHEROO!

Peanut butter, chocolate and butterscotch all rolled in to one rice krispie treat – how could it get any better?

Classic Scotcheroos

Ingredients:

1 cup sugar
1 cup creamy peanut butter
1 cup light corn syrup
6 cups crispy rice cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips.

Directions:

In a large saucepan, combine the sugar, corn syrup and peanut butter together. Cook over medium heat, stirring frequently until mixture just begins to boil. Add cereal and stir until well coated. Press into a greased 9×13 pan and set aside.

Melt chocolate and butterscotch chips together in a microwave safe bowl. Microwave on high stirring every 10-20 seconds to prevent burning. Spread evenly over cereal mixture. Let stand until firm or you can refrigerate to speed up the process.
