Cucumber Salad
I know we may be the only ones anywhere, but we started school yesterday. I have a third and first grader, so I am at home with my four-year old until she begins preschool at the end of the month. Everything outside tells me it is still summer, but going back to a school routine tells me fall is here, or at least quickly approaching. Either way you look at it, there is still plenty of time for barbecues and picnics.
Cucumber Salad
Ingredients:
7 cups thinly sliced peeled cucumbers
2 cups sugar
1 large onion, chopped
1 medium green pepper, chopped
1 cup cider vinegar
1 tablespoon salt
1 tablespoon celery seed
Directions:
In a large serving bowl, combine all ingredients. Cover and refrigerate for at least 1 hour, stirring occasionally. Serve with a slotted spoon.
