Strawberry Lemonade Muffins
Strawberries and Lemons are just two flavors that pair so well together. We know this because Strawberry Lemonade is a favorite drink among so many, but have you ever eaten Strawberry Lemonade? Well, here is your chance. These muffins have all the sweet and tart flavors of the classic beverage and are made into a make me smile muffin.
Strawberry Lemonade Muffins
makes approximately 22-24 muffins
Ingredients:
2 1/2 cups self-rising flour
1 1/4 cup sugar, divided
1 cup sour cream
1/2 cup butter, melted
lemon zest from 1 lemon (about 1 Tbls)
juice from 2 lemons (about 1/4 cup)
2 large eggs
1 1/2 cups diced fresh strawberries
Directions:
Preheat oven to 400 and line muffin tins with paper liners.
Combine flour and 1 cup sugar in a large bowl; make a well in center of mixture.
Stir together sour cream, butter, lemon zest, lemon juice and eggs; add to flour mixture, stirring just until dry ingredients are moistened. Gently fold strawberries into batter.
Spoon batter into prepared muffin pans, filling 3/4 full. Sprinkle with remaining 1/4 cup sugar over batter.
Bake for 16-18 minutes or until golden brown and a toothpick inserted in center comes out clean. Cool in pans on a wire rack about 10 minutes.

These muffins scream summer! Oh so delicious! I was initially doubtful if they, actually, taste like strawberry lemonade but these really do! A must try recipe. Will make ’em all summer long 🙂
