Tortellini Soup with Sausage

WOW!!  It really is 2013.  We had a great Christmas and an uneventful New Years.  {Sick kids make it hard to party on New Year’s Eve.}  Luckily for my kids Santa found his way to our house once again bringing all kinds of fun things including a new scroll saw for me!!  It has been on my wish list for quite some time and this was the year!  {I should have totally taken a picture of me with my new toy, but alas I didn’t.}  Unfortunately we having been having some really cold weather here that I just haven’t been able to brave it and head out to the garage to play with my saw.  So I am eagerly waiting for the temperature to at least get in the 40s so just maybe I will get to use it before it starts collecting dust.  I am new to the woodworking trade so anyone who has any experience feel free to leave me some tips!!

And since it has been so cold here, soup is on the menu quite often.  This soup and I had an instant connection.  I had this at a friends for lunch a little while back and begged for the recipe.  Not only is it delicious but it is so very easy to make.  Making this a win-win combination.

 Tortellini Soup with Sausage

Ingredients:

1 package spicy Italian sausage

2 14.5oz cans of diced tomatoes

2 14.5oz cans chicken broth

2 14.5oz cans Italian green beans

1 bunch scallions, chopped

6-8 cups water

1 large package cheese tortellini (or 2 small)

Shredded parmesan cheese, optional

Directions:

Brown the sausage in a large soup pot.  When the sausage is cooked through add the tomatoes, chicken broth and water.  Bring to a boil.  Add the green beans and scallions and bring back to a boil.  Let simmer for about 20 minutes.  Bring back to a boil and add the tortellini.  Boil according to directions on tortellini package.  Serve immediately with a little parmesan cheese on top.
