Cranberry Salsa
Personally, I am still in shock that it is December. The Christmas festivities are in filling the calendar. So if you are looking for a quick make ahead appetizer this holiday season; there is no need to look any further. This cranberry salsa is not only delicious and simple but can even be made the day before.
Cranberry Salsa
Ingredients:
2 cups fresh cranberries
1 small apple, cubed
1 jalapeno pepper, seeded and quartered
1 green onion, finely chopped
2 Tbls. chopped fresh cilantro
1/4 cup superfine sugar
1 Tbls. fresh lime juice
1 Tbls. canola oil
1/2 tsp. salt
Directions:
Pulse first 3 ingredients in a food processor 4 times or just until coarsely chopped, stopping to scraped down sides as needed. Transfer to a bowl; stir in green onion and cilantro.
Add sugar, lime juice, oil and salt; stirring well. Cover and chill 2-24 hours. Stir before serving.
Serve with sweet potato chips or cinnamon sugar pita chips. This is also delicious pour over a brick of cream cheese.
