Blackberry-Cantaloupe Salad
This fruit salad pairs to of my favorite summer fruits. And lucky for me they are both full of flavor this time of year. I can’t seem to get enough of either of these delicious summertime fruits.
This salad is best served at room temperature, the fruit is sweeter. This is great for any occasion and can easily be paired with just about any meal. So hurry and try it before summer comes to an end.
Blackberry-Cantaloupe Salad
Ingredients:
2 cups blackberries
1/2 cantaloupe, cut into 1 inch pieces
1 Tbls. sugar
zest from 1 lime
juice from same lime
1 tsp. grated peeled fresh ginger
2 Tbls. thinly sliced fresh mint leaves
Directions:
In a large bowl, combine all ingredients except mint. Cover and let stand 30 minutes. Stir in mint just before serving.
