Kids In The Kitchen:Blueberry Muffins
I know I have said it and I will say it again-Kids learn so much from being in the kitchen. Not only does the child learn, but me as the parent learns about my child. It is a great teaching and bonding time together. Kids really start to open about their day and give real answers. You know how when they come home from school and you ask what they did and the response tends to be either “I don’t know” or “I can’t remember”. If you are like me, you might think then why in the heck are you going to school all day. Well, for some reason being in the kitchen helps them to remember a few details that they might not otherwise.
These muffins need some adult supervision and help, but not much. It is a very simple recipe, the kids can do just about all of it depending on the ages and abilities of each kid. There is a lot of stirring {it is meant to be} and it is pretty fail proof. Kids love to pour and stir and this recipe is meant for them!
Really though, these muffins are really good whether made by an adult or a kid. In fact we make them a couple of times a week at the request of one person or another. And it seems that 12 is never enough for my family, so feel free to double it up and make 24.
Blueberry Muffins
Ingredients:
1 1/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1 cup buttermilk
1/3 cup vegetable oil
2 eggs
1 cup fresh or frozen blueberries
brown sugar for sprinkling on top
Directions:
Preheat oven to 425. Line 12 muffin tins with paper liners or spray with nonstick spray.
In a large bowl, combine the flour, sugar and baking powder. In a small bowl, whisk together the buttermilk, oil and eggs. Pour the wet ingredients over the dry mixture and add the blueberries. Stir until combined.
Fill each cup 3/4 full. Sprinkle the top of each with a little brown sugar. Bake 15-18 minutes, or until muffins are golden and springy to the touch.
