Peppercorn Ranch Dressing

My son Bryce and I share the same deep-seated love of fresh ground pepper.  We are those people who reach for the pepper even before they’ve tasted the food.   And of course, it needs to be fresh-ground pepper in assorted varieties {does that make us pepper snobs?}   Couple the  fresh pepper with a homemade ranch dressing  and it’s win-win!

Try it with the Barbecue Chicken Salad we featured yesterday – it’s a perfect match!

{P.S.  Jocelyn hasn’t gone awol; just suffering computer difficulties {sigh}.   Hmmm . . . Anybody in Denver want to trade tech support for dinner? ;)}

 

Peppercorn Ranch Dressing

3/4 cup mayonnaise
1/2 cup buttermilk
2 tablespoons parsley (fresh or dried)
1 tablespoon white wine vinegar
1 teaspoon dill
1 teaspoon onion, finely chopped or dried
1 clove garlic, minced
1/4 teaspoon salt
1 teaspoon fresh ground pepper (or more to taste)

Whisk together and refrigerate at least 2 hours or overnight.
