Barbecue Chicken Salad

 I realize we talked barbecue yesterday,  but I am in Texas, and here barbecue is a food group of its own {wink}.  Actually, I wanted to post this salad with the Oven Barbecue from yesterday because it’s another great Cook Once Eat Twice opportunity {love it}. 

This salad is incredibly good- aren’t the colors so beautiful?  Makes you want to reach through the screen and take a bite doesn’t it!  The point is, when you make the Oven Barbecue Chicken, you’ll want to make a little extra to save for this salad the next night – it will make it so simple!

Here’s the basics:  a mix of romaine and spinach topped with barbecue chicken and all your favorite toppings.  Be sure to include corn, black beans, avocado and black olives {even though I forgot to put the olives in the picture} . . .

The nice thing is you can set this up so everyone can add their own favorites, then add some crushed tortilla chips and your favorite ranch dressing.  The barbecue sauce is going to mix with the ranch for a whole new flavor experience you are going to love!   So fresh, so good, and good for you!!

Barbecue Chicken Salad

Mix together spinach with romaine lettuce, then add:

Cheese (Mexican Blend or any other)
Corn
Black Beans
Black Olives
Onion
Avocado
Bell Peppers
Tomatoes
Any other favorites you want to throw in : )

Top with Cooked Chicken tossed in barbecue sauce (I like to add the chicken warm, but cold will work also).   Add crushed tortilla chips and toss with ranch dressing – LOVE IT! 

I  recommend a Peppercorn Ranch Dressing  {yes, you guessed it – recipe tomorrow!}

Notes:  You can cook your chicken any way that works for you, boiled, grilled, rotisserie or of course Oven Barbecue reheated.
