Chicken salad is simply wonderful! You can use it as a side dish or as an entrée, it’s a favorite for potlucks or buffets, and it is perfect for luncheons and baby showers! You’ll love this version {it has a secret ingredient} because it is easy to make and loaded with pineapple, grapes, apples, and cashews – What’s not to love??
So what’s the secret ingredient?? Hidden Valley Coleslaw dressing {who’d of thought…} It adds a wonderful and unique “zing” to the pasta and chicken combination that you’ll absolutely love {watch out, it’s a little addictive!}.
Chicken Pasta Salad
2 cups Barilla piccolini pasta (any shape mini pasta – I like the farfalle)
1 ½ cups cooked chicken, cubed
1 bunch green onions, sliced (use tops also)
1/2 cup mayo or miracle whip
Hidden Valley Coleslaw Dressing (in the bottle, not a dry mix)
1 (8 oz.) can pineapple tidbits, drained
red or black grapes cut in half
1 red apple, diced
1 cup cashews
Cook pasta for about 5 minute* (al denti) and cool. Add mayo, green onions, chicken, and enough coleslaw dressing to evenly coat ingredients. Refrigerate overnight {pasta will soak up the dressing, so you’ll need to add more the next day}. Before serving, add grapes, pineapple, apple, and nuts. Add additional coleslaw dressing to coat ingredients. Yum – you’ll love it!

which do you recommend using- mayo or miracle whip? i have both and want it to taste the best. thanks!
I got this recipe from my sister and she recommends the Miracle Whip. (I am a mayo person myself and don’t usually have the Miracle Whip on hand – so I will use mayo). If you have both I would use the Miracle Whip for a little extra tang! But I have had both and you won’t be disappointed either way! Let us know how you like it!!!
