Wassail
So if some of you are wondering if Jocelyn has gone AWOL this week – she hasn’t; she is upstairs asleep here at my house right now. With a full week as room mom, girl scout leader, and activity days leader at church, that meant three big parties along with three small children including one sick two-year old, plus she left after the last party and got on a plane to be here for her brother’s graduation today {way to go Preston!}. I figured the least I could do was take care of Caramel Potatoes this week!
So here is another of my absolute Christmas favorites – wouldn’t be Christmas without it! A hot cup of wassail by a warm fire . . . doesn’t get any better – unless of course you have someone special to share it with!
Wassail
2 quarts apple cider or juice
2 cups orange juice
2 cups pineapple juice
1/2 cup lemon juice
1/2 cup sugar
1/2 cup honey
10 cloves
2 cinnamon sticks
Combine in crockpot or let it simmer on the stove for at least an hour to let the spices seep in – mmm, your house will smell so good! This makes enough for a crowd, but you can refrigerate the leftovers and heat it up when all the kids are gone to bed and you’re ready to curl up in front of the fire with a good book!
