Chocolate Chocolate Shortbread
Love shortbread? Love Chocolate? Then have I got a cookie for you! Chocolate shortbread covered in a rich, creamy layer of chocolate glaze, and topped off with chopped nuts – YUM! This recipe is easy and goes a long way. It’s a perfect addition to brunch, dinner, or holiday cookie trays {or most importantly a perfect late-night snack for you!}
Chocolate Chocolate Shortbread
Ingredients:
1/2 cup unsalted butter, softened
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1/4 teaspoon salt
1 large egg yolk
1/2 teaspoon vanilla
1 cup flour
1/2 cup coarsely chopped pecans or walnuts
Chocolate Glaze
3 ounces bittersweet or semi-sweet chocolate
2 tablespoons unsalted butter, cut into pieces
Supplies Needed:
9 1/2 inch fluted tart pan with removable bottom
Directions:
Preheat oven to 350. Lightly butter the bottom and sides of tart pan. Combine butter, sugar, cocoa and salt in a medium bowl. Beat with an electric mixer on medium speed until well-blended. Scrape bowl, then add the egg yolk and vanilla and continue beating until just combined. Add the flour and mix on low, scraping the bowl as needed until the flour mixes in and the dough begins to clump together.
Scrap the dough into the prepared tart pan. Using your fingertips, pat the dough onto the bottom of the pan to create an even layer (don’t go up the sides).
Bake about 25 minutes – until the top no longer looks wet and the dough just barely begins to pull away from the sides of the pan (you don’t want to overbake).
Just before the shortbread is done, make the glaze: Melt chocolate and butter together in the top of a double boiler or in the microwave. Stir until smooth.
When the shortbread is done, transfer the pan to a wire rack. Pour the warm glaze over the shortbread and spread evenly to the edges. Scatter nuts and gently press into glaze. Let cool completely, then remove from tart pan and cut into 12 or 16 wedges.
