Roasted Red Potatoes

Potatoes are just a wonderful comfort food.  Can there be too many ways to fix them?  I don’t think so.   Since we mentioned them yesterday with the Maple Baked Chicken, we thought we’d share this simple and basic method -because simple is always good and in this case delicious!   Just looking at the picture I’m thinking mmm . . .  maybe I’ll roast some  tonight!

 

Roasted Red Potatoes

Ingredients:

1 1/2 pounds baby red potatoes, quartered

2 tablespoons olive oil

Fresh ground salt and pepper

That’s the basics:  now depending on your menu you can go crazy with seasonings.  Try Rosemary, Thyme, Garlic, Lawrys,  Old Bay. . . oh the possibilities!

Directions:

Preheat oven to 425 degrees.  Toss potatoes with oil, salt and pepper {yummy with just salt and pepper or add any other seasonings you want}.   Spread potatoes into a single layer.  Roast, stirring occasionally until all sides are crispy and brown {because crispy is the best part } about 30-45 minutes.

*This batch makes enough for 4, but add more or just cook however many you need for your crew!

  1. I have been making red potatoes like this for years, they are delicious. I also like Ina’s red roasted potatoes coated with mustard, then the olive oil & salt, just great!
