Pork Chop Stew (Crockpot Recipe)

 

We don’t have any snow in Dallas to help get us in the Christmas Spirit; but for me there is one event that starts my Christmas Season off right.  For the last seven years, our church has sponsored a community nativity event that is absolutely incredible.  We display over 700 nativities and couple the event with local musical performances.  So the week between Thanksgiving and the first weekend in December I spend helping to set up this incredible event.  It is sooo much work, but it is truly a labor of love and the end result is sooo worth

Balsamic Pork Chops

We love pork chops at our house so I seem to love trying new ways to fix them.  These Balsamic Pork Chops are simple to make and have become a family favorite; they always come out tender and delicious.  I have used a few different balsamic vinegars such as raspberry and fig – they are always wonderful.  Serve them with roasted or mashed potatoes to soak up the sauce.

The past couple of months have been tough ones for Jocelyn and I.  Just a few short weeks ago, we said goodbye to our adorable, not-quite 2 year old  nephew/cousin Duncan.  This past Easter weekend, we also said goodbye to our mom and grandma.  It only seems fitting that today we should dedicate this post to her- especially since that is where we first acquired our love of cooking and good food.
