Autumn Crunch Salad with Chicken & Pasta
We love salad for dinner. One of our favorites is this Summer Fruit Salad with Marinated Chicken. Recently I saw this Autumn Crunch Pasta Salad on Pinterest and knew instantly we would love it. I added the same marinated grilled chicken from the summer salad and tweaked it to our taste. Just add some french or whole grain and you have a perfect fall salad meal!
Autumn Crunch Salad with Chicken and Pasta
Ingredients
1 head Romain lettuce, washed and torn
2 cups fresh baby spinach
1 1/2 cups small orecchiette or bow tie pasta, cooked
3 chicken breasts, grilled and sliced (or use rotisserie chicken)
1 cup celery, chopped
3/4 cup dried cranberries
1 can (15 ounces) mandarin oranges, drained
3/4 cup pecans, toasted (or use glazed pecans)
3 green onions, sliced
1/2 – 1 cup Parmesan or Feta cheese
1 large apple, diced

Instructions
Combine all the salad ingredients adding and subtracting to your taste. Chop the apple just before adding the dressing so it doesn’t brown. Combine with Balsamic Poppy Seed Dressing and serve with your favorite bread.
