Peach Dumplings
Several years ago, Jocelyn posted this amazingly good Apple Dumpling Recipe which rapidly became a family favorite for Sunday evening dessert. Since then I’ve seen several variations using peaches so we decided to try the update. Sure enough, the peach version is every bit as good as the apple.
These dumplings are as easy as it gets – who knew that you could get such goodness out of store-bought crescent rolls and a can of soda! Eat them warm out of the oven with a scoop of ice cream!
Peach Dumplings
Ingredients
2 fresh peaches or 16 frozen slices
2 cans (8 count) refrigerated crescent rolls
1 cup butter
1-1/2 cup sugar
1 teaspoon vanilla
cinnamon to taste
1 can (12 Oz.) 7up or Sprite
Directions
Preheat oven to 350. Peel and cut each peach into 8 slices. Roll each fresh or frozen peach slice in a crescent roll. Place in a buttered 9 x 13 pan.
Melt butter, then add sugar and barely stir. (It will still be lumpy.) Add vanilla, stir, and pour entire mixture over apples. Pour soda around the edges of the pan. Sprinkle across the top with cinnamon and bake for 40 minutes.
Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.
