Buttermilk Pancakes
There’s something wonderful about a hot breakfast and pancakes are usually right up there at the top of the most requested list. Of course you can use a box mix which comes in handy at times, but if you want a delicious and memorable breakfast whip up a batch of these buttermilk pancakes. They are almost as easy as the box mix, but so much better. In addition to maple syrup, try them with Cinnamon Peach Syrup, Fresh Blueberry Sauce, Apple Cider Syrup. or Buttermilk Syrup for an extra-special morning.
Buttermilk Pancakes
Ingredients
2 cups flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk if needed
2 large eggs
4 tablespoons butter, melted
Instructions
In a large mixing bowl, whisk together the dry ingredients. In a separate bowl, whisk together buttermilk, eggs, and melted butter. Combine the buttermilk mix with the dry ingredients stirring until just combined (a few lumps are ok). Add milk if needed until you reach the desired thickness or if the batter thickens as it sits.
Spray the griddle with non-stick cooking spray. Spoon batter by 1/3 cups onto the hot griddle. Cook until the edges are firm and small bubbles form and then pop. Flip and cook the other side until golden.
Serves 4-6
