Oatmeal Chocolate Chip Cookies
It’s hard to beat a good chocolate chip cookie, but sometimes I love the addition of oatmeal and lots of chopped nuts. I like to think that adding the oatmeal and nuts make them a little more healthy {smile}. These cookies are a classic comfort food – they are easy to make and always appreciated. They freeze well, so make a double batch and stock up.
Oatmeal Chocolate Chip Cookies
Ingredients
1 cup butter, at room temperature
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 eggs
1 tablespoon vanilla
2 cups flour
1 cup quick-cooking or old-fashioned oats
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts or pecans (optional)
Instructions
Preheat the oven to 350. Line several cookie sheets with parchment paper, or lightly grease with non-stick vegetable oil spray.
Beat together the butter and sugars until smooth. Add the eggs and vanilla.
Whisk together the flour, oats, baking powder, baking soda, and salt, and add to the butter mixture in the bowl. Mix until all is incorporated. Stir in the chocolate chips. Scoop the dough onto the prepared baking sheets using a 1 tablespoon scoop.
Bake the cookies for 8-10 minutes, until they’re a light golden brown, with slightly darker edges. Cool on a wire rack. Makes about 4 dozen cookies.
